Delicious Lemon Slice...
I'm loving my jasmine vine at the moment. I never thought to use as a cut flower until I saw a florist friend do so. It looks so pretty in a vintage jug, and smells gorgeous.
Something else I've been loving is this delicious lemon slice, so I thought I'd share the recipe with you. It's a recipe that's been circulating my sisters work and I can see why, it really is delicious. So delicious I've aptly named it that.
Delicious Lemon Slice
75g butter
1/2 can condensed milk
1 c coconut
1 packet crushed super wine biscuits(I did in food processor)
Grated lemon rind (1 lemon, finely grated)
1. Melt butter and add condensed milk. Stir and remove from heat.
2. Stir in coconut, crushed biscuits and rind.
3. Press firmly into a tin. Refrigerate, and ice when cold.
4. Store in fridge.
To make icing, just mix some icing sugar, a little bit of butter and squeeze juice from the lemon.
Keep it in the fridge, as it keeps it nice and hard... though I'm sure it won't last long!
